Peanut butter energy bars
This recipe makes about 12 bars.
WHAT YOU NEED
- 2 cups rolled oats pinch of salt
- 1/4 cup of sultanas (or any other dried fruit, e.g. chopped figs, apricots, cranberries)
- 1/2 teaspoon cinnamon tablespoon chia seeds
- 1/3 cup Fix and Fogg peanut butter (Smooth or Super Crunchy)
- 1/3 cup coconut oil
- 1/3 cup honey
In a large bowl, mix the dry ingredients together and set aside.
In a small saucepan (or the microwave), melt the wet ingredients. Pour the wet ingredients into the dry, and stir well to combine.
Spoon the mixture into a loaf tin lined with baking paper and refrigerate for an hour.
Slice into bars and enjoy!
