Peanut butter energy bars

peanut butter energy bars

This recipe makes about 12 bars.

WHAT YOU NEED

Dry ingredients:

  • 2 cups rolled oats pinch of salt
  • 1/4 cup of sultanas (or any other dried fruit, e.g. chopped figs, apricots, cranberries)
  • 1/2 teaspoon cinnamon tablespoon chia seeds

Wet ingredients:

  • 1/3 cup Fix and Fogg peanut butter (Smooth or Super Crunchy)
  • 1/3 cup coconut oil
  • 1/3 cup honey

METHOD

In a large bowl, mix the dry ingredients together and set aside.

In a small saucepan (or the microwave), melt the wet ingredients. Pour the wet ingredients into the dry, and stir well to combine.

Spoon the mixture into a loaf tin lined with baking paper and refrigerate for an hour.

Slice into bars and enjoy!
